font-weight: bold;" class="TextColor1" id="subjcns!1C1393F182AEC4FA!1089"&gt;El oficio de cocinero&lt;/h4&gt;&lt;div id="msgcns!1C1393F182AEC4FA!1089"&gt;&lt;div&gt; &lt;p&gt;En un elegante libro de cocina, ya de la Edad Media, Marcos Rumpoldt nos ofrece una descripción bastante cruda de lo que se podía esperar de un buen "cocinero palatino":&lt;/p&gt; &lt;p&gt;"Un cocinero de palacio, en quien puedan depositar su confianza príncipes y magnates, no tiene menos importancia que los restantes servidores, por encumbrados que estén”.&lt;/p&gt; &lt;p&gt;Por ello el cocinero de palacio debe ser un hombre de gran honradez, buena presencia, sincero, fiel, sano, limpio, aplicado, amable y muy entendido y ejercitado en el arte de la cocina, ya que su oficio no es tan excelso como difícil. Por ello debe ser agradable, bondadoso, complaciente, modesto, dulce y temeroso de Dios, en todos sus actos y gestos, y con toda su fidelidad, aplicación y temor de Dios, en todas sus manifestaciones, debe agradar tanto el corazón y el ánimo de su señor, que sepa granjearse siempre su gracia y favor (peredo 1991).&lt;/p&gt; &lt;p&gt;Ningún señor aceptará ligeramente a un cocinero cualquiera, que quizá se embriague antes de que los entremeses estén dispuestos. Si el cücincru jete de palacio fuese viejo y se hiciera inaguantable y maniático, el señor debe poner a su lado un ayudante joven, fino, activo y limpio para&lt;b&gt; &lt;/b&gt;que le&lt;b&gt; &lt;/b&gt;ayude a&lt;b&gt; &lt;/b&gt;atender los encumbrados y múltiples menesteres de la cocina, y siempre que la necesidad lo requiera esté a su disposición para cumplir sus órdenes fielmente y de buen grado. Los demás cocineros a sus órdenes deben tener también experiencia en el arte de preparar comidas. De carácter, el cocinero debe ser gracioso, jovial, obediente, bien dispuesto, amable y alegre”.&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;font&gt;&lt;font&gt;&lt;font&gt;&lt;font&gt;&lt;font&gt; &lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;p&gt;&lt;font&gt;&lt;font&gt;&lt;font&gt;&lt;font&gt;&lt;font&gt;Cuando la comida está lista y a punto de servirse, la mesa de servicio o de cocina debe ser cubierta con un mantel blanco, limpio y disponer en ella los platos y cubiertos, colocando cuidadosamente todo lo que se necesita para el servicio de los comensales, como limones, naranjas, aceitunas, queso, azúcar y toda clase de especias, así como cubiertos, servilletas blancas bien limpias, el pan y toda clase de salsas.
